237. In the almost bleak midwinter..

31st December. Well, here we are again, waving goodbye to another year that's passed by all too quickly. It's been a mixed year for us here at Pipérade Towers so let's hope that 2017 brings all of us better health and happiness.

30th December. It's hard to imagine that the activity shown in this next video would be allowed to take place anywhere else in the world (and certainly not in the UK!) other than in France. Yes, it's the curious existence of the bouilleur ambulant (mobile distiller). These wandering artisan distillers tow their homemade alambics (stills) - quaint relics from an earlier age - around the countryside in la France profonde converting fermented fruit into eau-de-vie (alcohol) for the farming community. There are fewer and fewer of these primitive-looking but effective contraptions left in France. According to the commentary (ahem), this practice is "strictly regulated".

Now and again, I've come into contact with this homemade 'rocket fuel'. Towards the end of a meal, someone will produce an unlabelled bottle from under the table with a knowing wink and offer to add some to your coffee. I was once given a plain unmarked bottle of this colourless product and I was surprised at how drinkable it was. I've no idea what strength it is but from a cautious sip, I would say at least 50% BV. (I call it C-Stoff!) I'd expected it to taste like after-shave or something similar but I must say that it was smooth and it went well with a coffee. I think that may have been the night I tried to take my trousers off over my head!☺
26th December. Here's a little Christmas treat for me (and perhaps for you).. We were fortunate to have experienced Paris in the 60s in our early days and we still look back on those times with great fondness - they remain very special. Here's a reminder as the incomparable Charles Aznavour spells out this paean to his youth in Paris in La Bohème (English lyrics here):

24th December. I'd like to wish all those of you still here a very merry Christmas and a happy and healthy New Year..

23rd December. I was dispatched into town earlier on a mission to buy some beurre de baratte. If you're anything like me, you'll have heard of salted and unsalted butter and that's probably the extent of your butter knowledge (ie, good for 2 minutes including questions!). However, I've just learned that beurre de baratte is "butter made the old-fashioned way; churned rather than extracted with a centrifuge". I must admit to never having heard of this "centrifuge" method - I'd always thought that butter was still made by churning - albeit on an industrial scale. We'll see..

Listening to the news that the terrorist thought to be responsible for the Berlin truck atrocity has been shot dead in Milan at 3am this morning, it struck me that someone ought to point out to would-be jihadis that there's one great flaw in their rationale. As I understand it, these 'martyrs' are promised 72 virgins in the afterlife - but maybe they wouldn't be so keen to die for the cause if it was pointed out to them beforehand that this would also mean 72 mothers-in-law..

22nd December. To me, a Mens VIIIs Final is one of the great sporting events and the Olympic Final at Rio in the summer was no exception. Best watched in full screen.

This isn't a good time to be a pig in the Pays Basque. One of our favourite shops in town is Maison Montauzer.. and one of the gastronomic highlights of the next few days will be a lunch of Montauzer's boudin blanc with sautéd apple.. in which I'm afraid Monsieur Porc will play a starring role. This is an annual treat that's greatly anticipated by yours truly.

It hasn't escaped my notice that there's a growing pile of intriguingly wrapped packages under the Christmas tree.. So far, I've have been able to resist having a surreptitious squeeze and rustle of a few of the more tempting ones - but I'm making no promises. Sooner or later, I'm gonna blow! ☺

With only a few days left to run to Christmas, here's a radio station that will help to put you in the festive mood while you search the house for those elasticated waist pants!

21st December. Today sees us 'enjoying' the shortest day of the year.. From now on, the days will get longer and longer until the long-awaited day when my shorts make their public appearance again!  

20th December. Into town this morning to do some food shopping for Christmas - the highlight of which was a visit to the indoor market to buy some cheese. The range and variety of cheese has to be seen to be believed.. I was under orders to return only with a Vacherin Mont d'Or (left) and a Brillat-Savarin (right).. I was sorely tempted to disobey my instructions and return with an armload! One of these days, I'd like to have a meal composed entirely of cheese (from mild to strong.. with wines and bread to match.) Then there were the poultry counters.. selling everything from free range turkeys to guinea fowl, chapons (capons), ducks, geese, pheasant, quail plus others I can't remember. And for English readers, hardly a Brussels sprout to be seen!☺

19th December. Madame came out with another couple of her expressions the other day: "mâtiné cochon d'inde".. and "trois fois rien".. I think the first expression refers to an animal of unknown origin. The second one means three times nothing - or, as we might say: a very small quantity - like zilch or peanuts.

7th December. Feeling in need of some fresh air and, more importantly, a vin chaud, we shot down to Biarritz in the late afternoon. One of the odd things about Biarritz is that there's a distinct absence of cafés with atmosphere - strange but true. We tried a couple of places but with no joy - no vin chaud.. We ended up on the Grande Plage at the Café de la Grande Plage - and settled for a hot chocolate while we watched the sun going down. It was still warm enough to be sat outside on the seafront. If anyone knows of a good café in Biarritz, drop me a line - please!

Garbure
We had a very pleasant surprise last night.. we'd been invited to a friend's for an apéro.. but when we arrived it soon became clear that we were actually going to be treated to something very special instead. Our friend had grown up in Arzacq, a commune that sits astride the border between Les Landes and the Pyrénées-Atlantiques, close to Pau, and one of the regional specialities is Garbure.. (also a great favourite of mine). We were six around the table - and we were served from a huge steaming tureen.. I think it went back to the kitchen twice more to be refilled..! After that, we still managed to do justice to her homemade crême caramel (right).. A great evening!



6th December. I don't often recommend books I've read to readers of this blog - but here's one that you should find a place for. I'm grateful to 50% of my Australian readers (OK, one person!) for recommending James Rebanks "The Shepherd's Life" to me, and I'm more than happy to pass it on. (Thanks for the tip Sue!) This autobiographical account describes in some detail the life of a shepherd/sheep breeder in England's Lake District through the seasons. Health Warning: I don't think a page goes by without sheep being mentioned!

It would be fair to say that my bookshelves are not exactly groaning with sheep sagas of any description. However, in one of publishing's success stories this year, the author's passion for a way of life that came to him through a family involvement stretching back some 600 years jumps off the page as he describes with unexpected lyricism the appeal of working closely with his Herdwick sheep on his beloved land. I surprised myself by enjoying this fascinating insight into the normally closed world of the Lakeland sheep farmer. 
I've only ever seen the Lake District from the perspective of a tourist so this behind-the-scenes look at the harsh reality of farming against a bleak climatic background was eye-opening to me. Here's the man himself talking to ABC Australia's Richard Fidler. (well worth a listen) 

The final words in the book resonated with me: "This is my life. I want no other". I think the world would be a better place if more of us could say this. At the risk of sounding smug, his words express exactly how I feel about our life here in the Pays Basque.

I think there are parallels with the pastoral life here in the Pays Basque. This powerful poem explains the visceral attachment Basques feel for their land and their house:

The love for his way of life as expressed by James Rebanks is of a similar intensity to that of our Basque hosts at the gîte we rented on arrival here in 2007. I wrote in Post No 10 that: 
"One Saturday evening, we were invited down for drinks with M and Mme D.. It was still warm and we sat outside. He had a bottle of pastis, a bottle of home-made pineau and a bottle of malt whisky on the table. He speaks French with an accent so strong you could lean on it..! At one point he was talking about his love for his land, his farm and his animals and his eyes clouded with tears.."
If Controller Household asks what you'd like for your Christmas stocking, then assuming there's some financial headroom left after the mandatory bottle of Glenmorangie (as previously advised), see if you can slip in a late request for a copy of James Rebanks' "The Shepherd's Life".

4th December. England finished their season yesterday with a convincing win over Australia at Twickenham by 37-21. It has to be said that England rode their luck in the opening minutes as Australia made a blistering start. But for some close refereeing decisions, the Wallabies would easily and deservedly have been out of sight after 15 minutes of non-stop attacking rugby, inspired no doubt by the need to prove a point after being on the wrong end of a 3-0 series whitewash against England earlier in the year. England had clearly given Eddie Jones a good listening to at half time because after the break they simply blew Australia away and virtually all of the second half was played in Australian territory. The Wallabies are a classy side with many talented attack-minded players - such as the all action Hooper, Pocock, Falau, Haylett-Petty, etc - but I think England had self-belief in spades - and, importantly, a stronger bench.

Australia could rightly feel aggrieved with some of the refereeing decisions.. the replay after a Marland Yarde try was given by the TMO clearly showed it to be a knock on - and I think Haylett-Petty was unlucky to be given his marching orders for a mindless late tackle on Mike Brown. On another day, with another referee, it would have merited just a penalty. Having said that, I think England deserved their win. It augurs well for the Six Nations next spring.


Each time we drive north from here, we pass the turn-off for Biscarrosse after about an hour - and it's somewhere that's been on my "must see" list for a long time. Biscarrosse was once the centre for flying boat operations in France when, for a few short years, many people thought that these magnificent aeroplanes represented the future of aviation - especially on the transatlantic routes. This remarkable aircraft - the Latécoère 521(right & below) had six engines - four pulling and two pushing - and it could carry 72 passengers and stay aloft for 33 hours..(gulp!) This manufacturer had some strange ideas.. (see here) Looking at the finished product, it seems to me that the aeroplane was assembled by someone who hadn't read the instructions..

3rd December. A splendid lunch yesterday in good company. I'm on the committee of a local association and our president had kindly invited us all to his home for a seasonal lunch. There were ten of us seated around a long table.. and we quickly got up to taxying speed with the aid of some 10 year old Aberlour single malt whisky. 

He told us that the day would have been his sister's 90th birthday. (Sadly, she passed away in June 2015). He showed us a photograph of his sister in happier times with her husband after the war. We raised our glasses to a very special lady.

She and her parents had been actively involved during WWII in sheltering shot-down Allied pilots and helping them to return to the UK via Spain and Gibraltar. They had been arrested in early 1943 and had suffered cruelly in their interrogations and during their subsequent deportation to the hell holes that were the concentration camps of Buchenwald (the father) and Ravensbrück (mother and 16 year old daughter). 

During the hubbub of conversation that followed, this story set me thinking  and my thoughts went back to someone I'd met a long time ago. I'd spoken to the president's sister a few times and I was always struck by her physical resemblance to a lady I once knew on a Greek island in the 1960s. She was a Jew and she had been deported from the island, along with almost 1700 others, via a long and harrowing journey to Auschwitz. Amazingly she survived - and she was one of the handful who returned after being liberated. She lived next door to me in the old town and sometimes I'd hear her screaming during the night. She once showed me a faded blue number tattooed on her left forearm. She had a haunted expression on her face and looked at least ten years older than her husband (who was actually older than her). She'd seen things that no-one should ever see. RIP Maria.

172. Saint-Jean-de-Luz out of season

16th December 2011. Yesterday Madame thought it would be a good idea if I took a break from my PC and so we drove down to Saint-Jean-de-Luz in the afternoon. The car was registering a warm 17C (63F) and, unlike in summer, parking wasn't a problem. The Christmas tourists from Paris, Bordeaux or Toulouse had still to arrive so we had the town more or less to ourselves. We found the prime spot to leave the car on the sea front (normally unobtainium) and stepped up to the sea wall to look at the bay - and what we saw stopped us dead in our tracks. Normalement, the bay is calmness itself and it's probably one of the safest places to bathe on the Côte Basque - but it was high tide and a raging surf was running right beneath us with rollers surging into the bay and breaking over the usually benign beaches.

Further north, there'd been a deep low pressure system out the Atlantic for some days and the onshore winds have been whipping up the Golfe de Gascogne (better known to us Anglos as the Bay of Biscay) with the result as described. Despite the fury of the sea, there were around 15 or so surfers out there braving the elements. Looking out beyond the breakwaters, towering grey rollers were rearing up high before breaking in a foamy turmoil - difficult to estimate how high they were but I would have said a minimum of 5 metres.. Quite a few other people were standing on the promenade - like us - transfixed by the spectacle. The normally flat horizon was jagged with these angry waves that were forming far out to sea. The breakwaters themselves were disappearing every few seconds in explosive welters of dazzling white foam. As we walked along the sea front I found myself stopping every few steps to have another look. The size and power of some of the waves out at sea beggared belief.. I'd like to have taken the car out on the Corniche (coast road) between St Jean de Luz and Hendaye to see if that celebrated wave at Belharra was running.  We took one last look before reluctantly stepping down a side street and heading down to the Place Louis XIV for a coffee. There's some awe-inspiring footage in this video* (7:00 and on) that shows the sheer size of the Belharra wave. In case you're wondering - like I was - what les dompteurs means - it means the tamers

On days like this, St Jean de Luz was a real pleasure to be footloose & fancy free in.. There were only locals and the narrow streets were blessedly free of stop/start crowds. We selected a table at the Bar de la Marine which is ideally situated in the heart of the town centre for people watching. 
It's also right next to the inner harbour. Sitting there in the warm sunshine it was hard to believe that Christmas was only 10 days away and still not a bunga bunga party in my diary! (I jest of course!)

Later.. I've just been closing all our heavy wooden shutters at the rear of the house (that faces due west) as the forecast is for some strong winds during the night. At times like this I'm glad we had the place double-glazed. If we hadn't have had it done, it would have been one cold & draughty night here. As it is, by the time any stray gusts have found their way past the shutters (that are almost an inch thick), and past the double glazing, whatever force the wind had has been completely spent.

I don't usually comment on politics here but you would have had to have been living on another planet not to have heard about the latest spat between France and Britain.. Here's Matt's view of it all..!

I spotted a Vacherin Mont d'Or lurking in the fridge yesterday.. ready for Christmas. Forget farmhouse cheddar, Stilton, American cheese or what have you - this is the king of cheeses. Made both in Switzerland and in France, there's everything you need to know about Vacherin (and many other cheeses) here. Here's a short video that shows how the Swiss do things:
I think I'm going to be pulling the plug here for a few days while we ingest an excessive amount of calories.. so to all of you out there in Blogistan, your correspondent wishes you a very Happy Christmas and good health in the New Year.. It's been an extremely busy few months for me with work and it looks as though the New Year will be more of the same. I'm enjoying it very much but when the warm weather returns I might be saying that through gritted teeth! So, away with you, go and wrap the dog or take your presents for a walk.. while I warm my feet by the fire we don't have.. (yet!)
Spare a thought for those who aren't as fortunate.. I'm looking for somewhere (like a childrens hospital or similar) in Bayonne to take a box of toys.. 
"Piperade Towers" is in fairly close proximity to the Law Courts in Bayonne and the road outside the house is heavily used for parking by members of the legal profession. We (the royal we) parked on the pavement outside our house a couple of months ago and picked up a 35€ parking ticket. Curiously, when the court is in session the pavements are full of Mercs, BMWs, Audis etc parked with two wheels up (à cheval as they say here) on the narrow pavement - the parking gods must be smiling on them as they never seem to attract the attention of the local police. Wonder if it's got anything to do with this sticker that they all display prominently on their windscreens? Surely not..! (Thinks: how can I print one off..?!)

23rd December 2011. I heard a day or two ago that Cape Verde's finest export (perhaps its only one) - Cesario Evora - had died.. I featured one of her songs a year or two ago after we'd been given one of her CDs.

96. Distant snow

11th November 2010. Now that the monsoon of the last 3-4 days appears to have blown itself out, we decided to nip across the border to Irun this morning for some shopping.. On the return journey, I was looking across at the Pyrenees and through a gap in the nearest hills I could see through to some more distant ones. To my surprise, the sun was shining like a spotlight through a break in the cloud onto a snow-covered peak..

Cheese - good or bad for you? An article in the New York Times sparked off this report from a US TV channel that attempts to link excessive cheese consumption with obesity and to score a political point in so doing. According to these figures (below), Greece is the top of the heap with France second. Yet strangely enough, contrary to the conclusion that might be drawn from the US report, neither Greece nor France are awash with wobbling blimps. In fact, it's a very rare event to see anyone overweight - let alone obese - waddling through the streets here in France. And - this will get me into trouble but it's true - those I have seen have usually had English accents.
I think obesity is less to do with 'excessive' cheese consumption and everything to do with a sedentary 'couch-potato' lifestyle, over-sized portions, snacking between meals and an excessive intake of processed foods high in additives such as sugars and salt - but then I'm not a doctor.

12th November 2010. I found this clip on YouTube of the sea at Biarritz today..
13th November 2010. Last Saturday morning, the river was the lowest I've ever seen it and we had rain showers - just to stop us getting bored..! I usually row on Saturday mornings and Tuesday & Thursday evenings. Last Tuesday, the Pays Basque was being lashed by continuous rain and Thursday was a national holiday (Armistice Day) so today was my first outing for a week. It was the opposite of last Saturday.. it was warm - I'm guessing 16°C - under a burning blue cloudless sky, the river was full to the brim and static - it must have been high tide. We did 13km in a coxless quad sculler. (running total = 321km)

To St Jean de Luz this afternoon - the car was registering 23.5°C (74°F) and it was like a summer's day down there - people on the beach, swimmers, surfers, people messing about in boats, queues for ice creams (!)..

I've been thinking about the Woody Allen question and one item that would definitely make my list of things that make life worth living (apart from my dearly beloved, natch!) is a Vacherin Mont d'Or cheese.. Known as Vacherin Mont d'Or in Switzerland or Mont d'Or in France, it's a seasonal cheese normally only available in the winter months.

There are also many recipes for baked Vacherin (I've not tried it baked).. and this one looks interesting.. What to drink with it..? This cheese can take a big wine and, personally, I'd earmark my best bottle of red for this cheese. (Something like a Pessac-Léognan or a Saint-Julien (this is a great red - but it would benefit from being laid down for a few years), or, if your taste leans more towards the Rhônes, a Gigondas or a Côte Rôtie) (It's once a year so don't worry about the price - you're a long time dead..) If Madame asks you what you'd like for Christmas, now you know! That is - if you haven't got one of these handy doo-hickeys on the right!

41. Basque specialities

29th January 2010. I was walking through Saint-Jean-de-Luz the other day listening to snatches of conversations from passers-by (as you do) when it struck me that the English language was probably outside the medals in a distant fourth place when it came to which language was most likely to be overheard there. The first three contenders are French, Spanish and Basque (in no particular order). The rowing club has started a regular exchange with its counterpart in San Sebastian over the border. Prior to the saga of my knees, we drove over there a couple of times for outings in their very distinctive "trainières" (right). I was quite surprised at how many of the French element could speak Spanish and there were even a few who could speak Basque as well. I've deliberately kept away from speaking "Angliche" with them there unless I've been absolutely forced to but I don't think many speak it at all. I noticed in Paris over Christmas that quite a few people kindly switched into English when my French wasn't up to it. However, down here in the extreme south west, English is a long way from being a second language.

After my Basque cheese market research episode, I was weighing up the pros & cons of the unique gastronomic specialities of the Pays Basque. In my view, while Basque cheeses don't stand comparison with the great cheeses of France, they're worth trying once or twice. Given the choice between a Basque cheese or a ripe Brie de Meaux, or even better, a (Vacherin) Mont d'Or, it would be no contest.. the Brie or the Mont d'Or (the king of cheese in my book) would win every time. Mont d'Or can only be found in the winter months which is why it's such a great Christmas treat here at 'Piperade Towers'. The Basque cheese has to be tried but only, in my view, out of a sense of duty that one is eating a regional product. (Edited to add: Re-reading this comment several years after I wrote it, I think I was being unduly harsh with Basque cheese. After all, an Ossau-Iraty cheese from Fromagerie Agour was voted the best cheese in the world a few years ago. Cheese is a very subjective subject - so take my comments with a pinch of salt - after all, Kraft Dairylea was the mainstay of my youth.)
This next comment might be seen as heresy here but I think the same is true of Gâteau basque which is widely found on local menus. I find it a fairly bland, stodgy cake that's pretty heavy going (you know you've eaten one) and devoid of any great taste. (I'll burn at the stake for this!) Yes, by all means give it a try when down here but don't expect too much from it. I'd better say no more on the subject! (Again, since writing the above one-eyed comment, my tastes have moved on and I've come to appreciate and, yes, enjoy gâteau basque.)

Just back from a VO (version originale - ie, in English) showing of George Clooney's latest - Up in the Air - at the flicks in Biarritz. The cinema experience was like going back 40-50 years.. No advertising, no relentless chomping of popcorn in bucket-sized containers, no half gallon Cokes being slurped, no rustle of sweet papers - just people out enjoying a film. How was the film? Not a feel-good movie at all - in fact, quite negative and depressing. If your Winter Fuel Allowance is burning a hole in your pocket, sit on your hands - because this isn't worth blowing a week's warmth on. Think George needs to speak to his agent.

40. Cheesed off..

28th January 2010. Here in France, cheese is a serious subject - as you might expect from a country that has n cheeses (where n is a number between 400 & 500) although this French web site asserts that there are now at least 1,200. 

I had an encounter outside the Grand Hotel in the centre of Bayonne the other day with a market research lady with a clipboard. After I confessed to being a Brit, she quickly established that I'd heard of cheese and then she asked if I'd like to participate in a cheese tasting survey inside the hotel. (quiet in the cheap seats!)

She sat me down at a table in the bar and I had to tell her which cheeses I was familiar with from a list. She then invited me to eat a dry cracker while she went off to fetch the first cheese.

She put a healthy wedge of an un-named Basque cheese in front of me. It was sat in a plastic tray container similar to the ones that St Agur or Roquefort is sold in. Then the questioning started. Did I like cheese presented in plastic? (all answers were on a scale from 1 to 5) Or did I prefer paper? Did I like the look of the cheese and was the cheese sticking to the plastic and did this bother me? Did I like the look of the crust, the feel of it, did it make my fingers sticky, did I like the smell of it on my fingers, did I think the crust looked real or man-made, did I think the crust was too thin or too thick, did I like the colour of the cheese, did I like its smell and a few more questions I can no longer remember before she finally said, now cut a piece off and taste it. More questions followed concerning what were my positive reactions to the cheese followed by my negative reactions.. What did I think of its ease of cutting, body, taste, smell, after-taste, texture, granularity, creaminess and saltiness?

She then invited me to have another bite which triggered another endless stream of questions - apart from the only one I was ready for (the Major Bloodnok question), but which, alas, never came: "Is it like Cheddar..?" Gawd knows what she'd have made of the cheese of my youth - Kraft Dairylea..

She disappeared off to fetch another one and by now, I was starting to lose the will to live. When she returned she went through exactly the same procedure with the new cheese with the addition of a few comparative questions relative to the first cheese..

She wouldn't tell me what the cheeses were but I think the cheeses I tasted were both varieties of Etorki. This is a cheese made in the French Basque country, at Mauléon-Licharre in the interior of the Pays basque.

In the interests of balance, I google'd the British Cheese Board and it appears that there are over 700 named British cheeses produced in the UK, with "a cheese available for every occasion". I wonder if any of the occasions imagined by the BCB included tiling the bathroom floor, wedging open the garage door.. or stopping that annoying wobble of the dining table.. we'll never know.

Time for a late New Year's resolution: in the interest of preserving what remains of my reputation, this year I don't intend to enter any more hotels with strange ladies bearing clipboards to "discuss cheese". Unless, of course, they're offering a glass or two of red wine with it..
